Leftover Mashed Potato Casserole With A Pinch Of Cheese On Top

If you love mashed potatoes as much as I do, you’re in for a treat!

I do like the traditional version, but I always enjoy trying new ways to amp up the leftovers. It’s impossible to make the perfect amount of mashed potatoes, isn’t it? No matter how many eaters you have in your house, there’s always going to be some. And that’s perfectly fine! With leftovers, you get to make this awesome dish!

One of my favorite ways of using leftover mashed potatoes is to make Shepherd’s Pie. I also love mashed potato patties and my kids are crazy about them, too, but I would rather try and avoid frying. That’s where this mouthwatering version comes along!

You don’t need to fry anything to make these cheesy mashed potatoes, and if you pay attention to what kind of cheese you are using, you can turn this into a low-fat version. It’s still going to taste absolutely amazing!

This is probably the easiest side dish I’ve ever put together, and it’s so delicious that I could have it for an entree. I can’t wait until the next time I make mashed potatoes – I think I’m going to make a double batch just in case…
