My kids actually ask for this for their birthday breakfasts now. I have always let them chose the entire menu for the day when it’s their special day. I was a little surprised when they started choosing this over pancakes, waffles, or muffins, but they did. I don’t mind it one bit. I can make it the night before and stick it in the fridge. That way if their birthday is during the week, I’m not set back on my normal morning routine.

Breakfast casseroles are amazingly versatile… this one is no different.
Ingredients
1 pound mild pork sausage, cooked & drained
1/2 cup chopped onion
1/2 cup chopped green pepper
12 eggs
1 cup milk
1 package (16 ounces) frozen hash brown potatoes, thawed
1-1/2 cups shredded cheddar cheese
1 teaspoon salt
1/2 teaspoon pepper
Instructions
In a skillet, cook sausage until no pink remains.
Remove with a slotted spoon; remove and set aside.
Beat eggs and milk in a large bowl.
Stir in hash browns, cheese, salt, pepper, onion, green pepper, and sausage.
Transfer to a greased 9×13 baking dish.
Bake uncovered at 350 for 35-45 minutes or until a knife inserted near the center comes out clean.
Yield: 6-8 servings.
