My neighbor had just had a baby, and they were home after spending a few days in the hospital. I gave them that long before I wanted to go over there and squeeze and love on that tiny little human. I remember bringing my babies home and how overwhelming it was to have so many visitors right away. That’s why I waited. I also remembered not wanting to cook anything. My husband and I ate out for a week straight.
I had my mind made up that I was going to make something to eat to take over, so that she could enjoy a homemade dish without having to put her new child down. This skillet spinach and artichoke dip was a recipe that came across my computer from NeighborFood, and I was just waiting for a reason to make it.
After it was done, I second-guessed even going over there. I wanted to just sit at home and eat this entire pan myself! That’s how good it looked. I didn’t though. I wrapped it all up and headed on down the street.
