Every morning, my husband, the kids, and myself are running around trying to get ready for school and work. That means that we don’t have a lot of time to make up a fancy breakfast. Cereal, toaster pastries, and oatmeal are frequently seen on the table. Even though those are okay breakfast choices, it gets boring having the same thing day after day. I have tried the freezer waffles and such too, but they just aren’t as good as something that is homemade. That’s where these muffins come into play.
I absolutely love blueberry muffins. I love them so much in fact, I ate one every single day when I was pregnant with my youngest child. I had to cut that down quite a bit in order to get my waistline back, but I still crave the flavor.

I usually make them the night before and then we grab and go with them for breakfast the next day. It’s a great alternative to those boring regulars.
