Whenever I am doing our meal planning for the week, I usually have a pretty easy time mixing in old recipes with new ones. That’s especially true when I’m making different casseroles and main entrees. The only time I fumble is when it comes to the side dishes. I am such a macaroni and cheese or rice kind of person, we have it all too often. It is something that my kids have always eaten, even if they don’t eat what else I prepared. I know it’s my safety net so they are at least eating something.
Now that they are getting older, its time for me to try out different things on them. They are getting a little more adventurous with their taste buds, and I want to take advantage!
When I came upon this corn casserole on Group Recipes, I was really excited to give it a try. They loved it! Not only did I have a new side dish to put in the rotation, they were also eating their vegetables without complaining! Double bonus!
