As I was dropping the kiddos off at school I usually think about what I am going to make for dinner that night and stop at the store if I need to get anything. But that day I was truly stumped. Nothing really sounded too good. I consider myself the queen of casseroles, but I was not feeling in a casserole mood that day. So, my question was, what do I make?
I thought about it on the way home and decided that I really wanted to have chicken. Well, that doesn’t really help me too much. What kind of chicken did I want to make!?
So, I got home and decided to pop on a cooking show while I was folding laundry. I am so glad that I decided to do that because I found out exactly what I was going to make!
I decided to make crispy parmesan chicken and zucchini. This looked so delicious that I was salivating just watching the lady cook this on her show. I knew that I had to get the recipe and makes this for my family. Not only was it delicious, but it was on the healthier side too. This recipe has become a dish that I make quite frequently. My famiy absolutely loves it!
