My brother is probably one of the pickiest people I have ever known. He was like that as a child, and he hasn’t changed much now in his adult life. There are few things that I can make that I know he is going to eat. One of those things is tacos. When he was coming for dinner one night, I contemplated making the traditional tacos that I know he loves, until I found this recipe on Group Recipes for a taco casserole. It sounded like something different that I might actually be able to get away with.
When I assembled it, I left all the extra vegetables one side because I knew that was a no-no, but the rest was going to be right up his alley. He looked a little unsure about it when I first pulled it out of the oven and put it on the table, but then I plated it and he looked a little more hopeful.
I reassured him that there were no veggies on his side, and he dove right in. He ate the entire half that I made plain, and then gobbled up some of the other part of the dish too! It’s a good thing it was just the two of us eating that night, or there wouldn’t have been anything left for anyone else!
