I will be honest with you all. I have been working on watching what I eat. The problem is is that I love to eat. I love to cook and I love to eat what I cook. I think that making delicious food is a wonderful part of life. But I also know that too much of the yummy sweets is not going to bode well for my waist line. The older I get the more conscious that I have to be of what I eat.
But I just love cooking food and sharing it with people! I know that I am a great cook and I loved to enjoy the food that I make with the people I care about. I really love comfort food and I just so happen to find food comforting! So, I had to find a middle ground. I am finding myself cooking with more chicken and fish. I love to eat chicken, but it can get a bit boring if that’s what I am eating all of the time.
I found this wonderful casserole that is perfect! Easy on the carbs and calories, delicious tasting, and a true comfort food. This casserole really made me feel that there is a way to eat healthy and not boring! This casserole is really yummy and will not make you feel guilty after eating it! Give it a try and you will see!
