It was time for another graduation party in the family. This time, it was going to be my nephew that was making the giant leap from high school into the college life. There was a time when we were a little nervous about whether or not he was going to make it through, but he did. We were so proud. My sister was throwing him a graduation party in order to show of how much she loved that man and all of his accomplishments.
As a favor, she asked if I would make the traditional taco salad. Of course I will! We always help each other out whenever we can, and I was happy to do whatever I could to make the day easier for her. I made up a huge batch of it just like this recipe from All Recipes.
It’s always a huge hit, and this party was no different. I didn’t have a single leftover to worry about when we got done. That’s always nice, because then there’s no soggy lettuce!

Quick Tip: Make a separate bowl with no veggies… the picky kids will thank you.
