When my kids are on holiday break, or even home for the long summer break, it makes me so happy. There are two main reasons. The first is that I love to have them around me all the time. Some people call me crazy, but it’s true! Sure there are days when I would be happy to send them to school to get some peace and quiet, but for the most part, they are fine just where they are. The second reason I like these kinds of days is because I finally get to sleep in a little bit!
Mornings during school days can get pretty hectic. I have to make sure everyone has breakfast and vitamins, brushes their teeth, gets clothes on that are clean and not full of wrinkles, has a lunch packed, and heads out the door on time. It can get pretty chaotic.
On those mornings when I get to sleep in a little bit longer, I wake up refreshed and ready for the day. I like to start out by making a casserole like this hearty one from Recipe Lion. It’s our own special little treat. The kids love it too! So does my husband.
