A Chicken Tortilla Soup That You Need To Try!

 

I was just thinking today how much my family and I eat Mexican food. It really is our favorite food to cook at home too! There are so many things that you can make that are yummy and even kids like. I’m not just talking about tacos either! There are plenty of dishes that kids will eat that are Mexican. Take it from me! It’s also a great way to get kids to eat veggies. Mexican good tends to have a lot of fresh veggies that are disguised in the yummy cheese or sauces.

A lot of Mexican dishes are so flavorful that you don’t even notice that you are eating veggies. My youngest does not really like ground beef that much, but loved Mexican seasonings! So, this cuisine really works in a number of ways for my family. We love to eat quesadillas, tacos, enchiladas, tortas, tostadas, etc. The list can go on and on! One of our absolute favorites right now is chicken tortilla soup.

This is a great soup. It’s easy to  make too! Throw it all in the crock pot and forget about it! The smell is amazing too! This tortilla soup is one dinner that will stick around in my household for a good while! My kids really loved it when I made it for the first time. Sometimes ui bake tortilla strips and throw them in the soup right before serving. They love the crunchiness in the soup!
