My Mother is and always has been the most important person in my life. Whenever I need something, I know she will be there for me. Now that I’m the adult, I try to help her out as much as I can. When her birthday or Mother’s Day comes around, I gather up the kids and my husband and we head over to spend some time with her. There’s nothing more valuable in life, especially after becoming a parent with a busy schedule, than time. Nobody knows that more than my very own mother.
The last year for her birthday, I wanted to take her a special treat. She doesn’t like sweets per say, but she does love fruits. So I did a quick search online and found this strawberries and cream icebox cake on Baked By An Introvert. It looked amazing.
I knew that she was going to love it. Strawberries are her top fruit, and who doesn’t love cream?? This was really easy to toss together and Mom’s eyes lit right up when she saw it. That made it worth every second I spent making it.
