Lunch has always been my favorite meal of the day. I’m not sure why. Maybe it’s because it keeps me going? Actually, I know! I just love what is considered lunch food! Really! When I think of lunch I think of salads, small pasta dishes, sandwiches, soups, etc. You get the idea! I like these foods because they are simple, but usually surprisingly delicious too! So, I tend to make sure that I have a lunch to look forward too.
My favorite type if lunch is a sandwich and soup combo. I mean I could eat soup for almost any meal, but it always feels right when it is lunch time. Most of the time I would go to different restaurants like Panera, but that just gets so expensive after a while. I’m not raining money! And to be quite frank, I can make half of the things on the menu better myself. So, I decided to roll up my sleeves one day and get dirty!
I was no longer going to spend money that I didn’t need to and my first initiative was to start making my own yummy lunches. My first yummy lunch was a sandwich and this curried sweet potato and carrot soup! Oh my goodness! This soup is so yummy and so easy to make! I couldn’t get enough when I made this soup. It tasted even better the next day too. I love leftovers that taste good when they are reheated! Try this soup and you will be in love!
