Ridiculously Easy And Amazingly Tasty Slow Cooker Pulled BBQ Chicken

When it came time for the drawing, I was kind of hoping to get the main entree ticket again, just because this was such a huge hit. I didn’t get it again, but now I know that I have a great meal that I can make whenever I am going to a potluck or having guests over for a meal. When I don’t want to crank on the oven in the hot summer months, this is one of my first choices for a meal for the family. It’s so tender, juicy, and delicious, I really can’t go wrong here!

Don’t listen to those people that tell you the crock pot is only for the winter, because it’s not!

 

Ingredients

4 pounds boneless, skinless chicken breasts

1 sweet onion, diced or cut into large chunks

½ cup Domino brown sugar

¼ cup Kraft Italian dressing

1 cup Sweet Baby Ray’s BBQ sauce, divided in half (1/2 for cooking, ½ for finishing)

2 teaspoons minced garlic

2 tablespoons honey

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon pepper

 

Instructions

Place chicken in slow cooker.

Toss cut up onions over top of the chicken.

Combine brown sugar, Italian dressing and ½ of the BBQ sauce together in a medium size bowl. Whisk until smooth. Add garlic, honey, and spices. Whisk until combined. Pour over chicken and onions.

Place lid on slow cooker. Cook on low for 6 to 8 hours, or until chicken is tender enough to pull apart with forks.

Use forks to shred the chicken, or use a hand mixer with beaters to shred the meat. This technique works beautifully for shredding pulled meats.

Add remaining sauce to the slow cooker with the meat, and cook just until it heats up. I usually heat it all up in a cast iron pan for a few minutes to really bring it all together and save time. You do whatever works for you. Once it’s hot and well combined you’re good to go. Time to chow down.

Place on slider buns or hamburger buns. Eat it plain or with a slaw. Your choice.
