Crispy Crunchy Corn Pudding Muffins

Every summer, my step-father drops of tons of corn, and I have no idea what to do with it all. Granted, we eat some on the grill or just boil it for a side dish for meals in the house, but it seems as soon as we get rid of the corn we had, he’s dropping off more. I will shuck some and put it in the freezer so that I can have fresh corn in the winter, but there is still more corn coming through the front door. I wish at times he didn’t grow the stuff, but he loves it.

So, I had to start figuring out what else I could do with corn. That’s when I took the internet. You can find just about anything online. When I punched in corn recipes, this one from Living Healthy In Seattle was one that came up. It looked easy enough, so I made them to go with dinner that night.

Everyone at the table really enjoyed these and took two to go with their meal. The leftovers went in the fridge but I don’t think they lasted until the end of the day. People were sneaking in and popping them until the container was gone!
