My husband and I love to go to Mexican restaurants when we go out on our date nights. They serve up food that I can’t always imitate so well at home. The choices on the menu are so good, we have to keep going back until we try one of everything at least! There was one night though, my husband had just gotten out of the hospital following a short illness, and he didn’t feel like going out. Now, he still wanted his Mexican food though, so I had two choices: make something, or order out.
I don’t really like going out alone during the dinnertime rush, just because it’s so busy. It makes me quite nervous actually. I decided while thinking about that, I was just going to find something to make myself. I discovered this recipe on Cravings of a Lunatic and figured it was worth a shot.
The ingredients and instructions seemed simple enough, and when I got to work, I discovered it was so easy! It came out of the oven looking amazing too. When we tasted it, my husband said he was happy we didn’t go out. What I had made was absolutely perfect!
