I am always having a hard time coming up with easy weekday meals. Half the time I just give up and go buy something at a restaurant. It’s so much easier to me, but I have vowed to change that. At the turn of the new year, I decided that I was going to try at least one new recipe every week. By the end of the year I would have 50 recipes to turn to when I needed to make something to eat, making my life a whole lot easier. At least that was the plan. Maybe I didn’t do it every week, but I came up with some good ones along the way.
One dinner that I never would have considered making until I actually did it was meatloaf. I was one of those that always followed the negative rumors about meatloaf being gross. That wasn’t farther from the truth when I made this version from Spend With Pennies. It was awesome!
Everyone at my dinner table really enjoyed this recipe too, so much so in fact, that I made it again the following week, and a few weeks after that. This is a new family favorite, and I’m certain it’s sticking around for a while.
