Will You Be Serving This Chicken Parmesan Casserole Tonight?…Cuz Ya Should!

When I was in college, I had earned enough money to get a tiny apartment with a couple of my classmates. There were only two bedrooms and three of us living there so it was a tight squeeze. It was a great way to save money though, and it was really a lot of fun. We used to pool all of our money together and go grocery shopping together once a week. That was always interesting because each one of us has different tastes in what we like, and we all had different recipes that we brought to the table.

Jenny, one of the girls I shared the apartment with, had an amazing recipe for chicken parmesan casserole that her mom had given her. The ingredients were super cheap, so we bought it almost every week. It was very similar to this recipe from Spend with Pennies. The nice thing was, it was so filling.

We always had enough to feed each of us until we were stuffed, and then there were usually leftovers, that we fought over the next day. I still make this for my family today. The kids just love it!
