When my kids were in high school, it felt like I was on the move 24/7. At least that was true before they got their own cars. I was constantly running kids here and there to different practices, meetings, and social events. Having time to cook after working all day was pretty much out of the question. Once in a while I could sneak in a spaghetti or something, but for the most part, everything that we ate had to be prepared the night before or put in the crock pot in the morning, or there just wasn’t going to be enough time.

The dish the kids loved the most was similar to this recipe from Julie’s Eats & Treats. It’s basically a sloppy joe, or some people call them barbecues I guess. What I did with them though, is make them up the night before after everything had settled down for the night.

In the morning, I would pop them in the crock pot on low, and by the time everyone came home from work and school, these were piping hot and ready to go. Paired with a basic side dish, dinner was done and eaten before we headed back out into the after school craziness.
