My husband called me one day on his way home from work to let me know he was bringing a co-worker home with him. His landlord called him and told him that a pipe had burst in the apartment he was staying in so they had to fix the problem and clean out his bathroom. That was no problem with me, but I hadn’t really planned anything for dinner. It was one of those night that I was just going to let everyone grab something for themselves. Peanut butter and jelly sandwiches and what not.
I couldn’t do that anymore. I reached into my box of simple recipes and pulled out one that I had recently printed off on Group Recipes for a beef, cheese, and noodle casserole. It only required ingredients I already had on hand, and it didn’t take long at all to make… that was it!
It was done just about the same time they got home from work, and it looked like I had been planning a nice dinner all night long. This one is a lifesaver for sure!
