It had finally happened. I didn’t think the day would ever come. I honestly didn’t want it to, but it was inevitable. Our youngest child graduated high school and was heading off to college. Thankfully, the campus was fairly close to home, only about two hours away. Weekend trips weren’t out of the question. Still, dropping him off that day with all of his goodies on his dorm room steps was probably the most confusing day of my life. I was so happy and proud, yet I felt so sad and empty at the same time.
I got home and walked from room to room in the house, just thinking how lonely and quiet everything was. What was I going to do with myself now? Then it hit me. Now I can focus on my passion… cooking! I had so much more free time to do what I wanted… let’s do this!
The first recipe I found that said it was going to be a challenge were these baked cauliflower fries. Game on! I whipped these bad boys together for dinner the very next day. They were incredible. I think my husband is going to like all this new experimenting I get to do now that all the kids are grown and gone as much as I am!
