Are You Ready To Sample Some Of These Simple South-Of-The-Border Enchiladas?

When I was in high school, I would frequently eat dinner over at my boyfriend’s house. His mother was the sweetest lady alive. She was also an amazing cook. Anything that came out of her kitchen, I wanted to try. My parents worked as much as they could, and I was an only child, so they were grateful that they would let me eat with them. When she made beef enchiladas for the first time, I think I liked her more than my boyfriend. They were the most delicious things that had ever hit my lips!

I didn’t want to look like a pig, but I wasn’t shy about asking for seconds either. I just kept telling her how good her dish was. I wished that my mom would make something like that. Then, I thought better of it, I was going to make it for my mom! The next time she made these I went and watched the process.

A few weeks later, I went and picked up all the ingredients all on my own, and my boyfriend and I made my parents dinner. They didn’t get home until much later than dinner time, but they were so happy to see a nice warm meal on the table, and I was happy to do it for them.
