I love my in-laws to death. Let me start with that. They are the greatest people in the world. They are awesome grandparents to my kids, and they gave me my husband, so there is that. With that being said, my mother-in-law is quite the critic when it comes to my cooking. Now, she’s a great cook, so I can understand that maybe she is just trying to help me improve my skills, but sometimes it can get rather frustrating. When they are coming for a visit, and I know I have to make a meal, I just start sweating.
I don’t want to disappoint them by making something too simple, but I don’t want to try and go beyond my abilities and ruin dinner either. When I thought about making a pot pie, I was doubtful that I could do it. A few friends reassured me that it really wasn’t all that difficult. So, I figured I would give it a try.
I found a recipe on The Pioneer Woman that didn’t seem all that hard, and I printed it out. I gathered up all the ingredients and made it for their next visit. I think it was the first time that I never got any pointers on how to improve my dinner. Finally, I can breathe in my kitchen a bit again.
