My mom used to have a sixth sense about us kids. She would know exactly how we were feeling at any given time. Most of the time, it was like she knew what we were feeling before we did. I guess it’s one of the great parts about being in that mother role. I know I can know stuff about my kids now before they do. It’s actually quite the super power. When we were feeling down and out, she would always try and cheer us up with some extra snuggles, a good movie, and a comforting meal to go with it.
One of my favorites, was this beef stroganoff that she could whip up in what seemed like a few minutes. The recipe on The Pioneer Woman reminds me a lot of the way my mom used to do it. It has all of these incredible flavors that combine and just make you feel absolutely wonderful.
Now that I have this recipe, I make it at home all the time. It goes over really well with my husband. In fact, it’s one of his most favorite things that I make. Whenever he asks for it, I know that I’m just going to have to make it because… I want some too!
