How Can You Go Wrong With Chili Cornbread Casserole?

As soon as the weather starts to get a little bit cold, throughout all the entire winter, and even some in the spring and winter months, I am making chili. It’s one of my favorite things to make. Why? Because it’s so simple. Just brown up some hamburger and then toss it and a few other things in a crock pot and let the rest take care of itself. I love it! I make it at least every other week I would say. My family never cares either, we all enjoy the flavor.

The only problem is, when I make it so often, we can get stuck with the leftovers. Now, if I just had to feed myself and maybe my husband, what gets left behind probably wouldn’t be an issue. There are more of us than just two though. I need to make that chili spread a little bit farther.

When I saw this recipe on Cravings Of A Lunatic, I was pumped up to say the least. It only had four ingredients, used leftover chili, and sounded simple and delicious. After making it for the family the first time, I’ve continued to make it over and over again. It’s great to fill up everyone at the table.
