Growing up, my sister’s favorite food was always sloppy joes. Whenever Mom would let her pick dinner, we knew what it was going to be. I think my Mom let her pick when she didn’t feel like making a great big supper. How easy are sloppy joes right? So, when my sister was coming home from her last year in college, I wanted to make her something special to welcome her back. I wanted to do sloppies, but maybe something slightly different. When I did a search for them online, I found this sloppy joe casserole on Cravings Of A Lunatic. How perfect is that?
There weren’t many ingredients, basically the same thing you need for a regular sloppy joe. The instructions seemed like something that I could handle. The day of her arrival, I gathered up all my purchased items and whipped these together in no time at all. I think I was done in 30 minutes. As she walked in my door, she wondered where her favorite food was, because she could smell them.
When I pulled this out of the oven, she looked a little shocked, maybe even slightly disappointed. That was until she tried it. This was actually a really tasty casserole. She loved it! I was just happy to have her home once and for all… The casserole was good too though.
