When I was at a summer BBQ one year, a good friend of mine had made a nice broccoli and cauliflower salad. It was really good. I had never really heard of combining the two before. I had eaten broccoli salad plenty of times, one of my faves! I asked her what made her decide to throw in the cauliflower. She said simple… she didn’t have enough broccoli. Well, I’ll be. I started to wonder if there was a way that I could do something similar but with hot veggies for a winter side dish. I knew that yes was the answer, but I just didn’t know how to do it. Thank goodness for the Internet, right?
When I found this recipe on The Pioneer Woman, I knew it was exactly what I was looking for. All cheesy and warm and delicious. Yes, please! The next time I went to the supermarket I got all of the ingredients that I needed and made this to go as a side for dinner that we were having that night.
Let me tell you, AMAZING! Plus, the kids liked it, so it’s a fantastic way to get in all those extra veggies without them complaining. I make this a few times a month now with no arguments from the dinning room at all.
