I Bet You’ve Never Had A Skillet Meal Like This – Mexican Style!

When I used to go couponing, back when I could still get items at the local grocery store for free or next to nothing with their double coupon offer, I ended up with a whole pantry full of Hamburger Helper. Up to that point in my adult life, I had never really had much interest in the stuff. But, it was cheap, so I was buying it. We ate it about once a week or so after I realized how simple it was. The only thing, was I knew it wasn’t super healthy with all the salt in there.

Eventually, my stockpile ran out. I considered buying more, but the cook in me knew that there was another slightly healthier option, I just had to find it. That’s when I started making this recipe from Julie’s Eats & Treats instead of using the helper from the box.

This Mexican skillet meal is just as good, if not better, and just as easy. It’s a family favorite at our house. I make it in place of the other stuff, still about once a week or so. There are requests for it more often than that I think!
