Overnight Cowboy Bacon Breakfast Casserole

Whenever my sister and her family come into town, it’s always a fun time. We play games, laugh, have dinner, and just spend some nice quality time together. Her kids and my kids are around the same age and it’s really fun watching them interact with one another. They are still at that age where they are so cute to watch. when we are really lucky, they will spend the night. That means that the fun gets to continue into the following day and we love it!

Usually, we go out for breakfast when that happens, but after I found this recipe on Spend with Pennies for a breakfast casserole, I wanted to try something different. It had all kinds of good stuff loaded in it, and I knew that all the adults would get a kick out of it for sure.

I wasn’t too sure on the kids, especially my picky eaters. When this came out of the oven, it’s like everyone woke up at once and came out to see what was going on. There wasn’t a single empty chair at the table. All the kids had a piece, and all the adults had two!

I can see this being a new tradition when they come to visit from now on!
