Everyone knows someone that does not like eating vegetables. So you know that you have to get creative with it! My mother was one of the creative people and I was one of the picking eaters. I got it from my dad. He’s a meat and potatoes kind of man and vegetables were not his thing. He was a very simple eater and when I was a little girl I followed suit!
My mother knew that if she wanted us to eat any sort of greens that she was going to have to make it flavorful and she did just that. She would mostly make some sort of veggie casserole side dish. She would look at me and say that all veggies taste good, but taste even better when they are creamy and cheesy.
I recall my favorite vegetable casserole to this day, that I love to make now. A creamy and cheesey spinach casserole. When I close my eyes I can imagine the smell coming from the oven. I never even thought of it as a vegetable dish. I just knew that it tasted delicious and even my dad thought so!
Now you know that is a successful casserole!
