One Simple Addition Puts This Cheesy Potato Casserole At The Front Of The Line

When I was a teenager, I loved spending time with my grandpa. Some people didn’t understand, because most kids my age were running around chasing boys and acting like wild kids. I did that too, but when I had an opportunity to go with Gramps some place, I was taking it. Mom never knew, but every time we would get a little ways down the road, he would let me drive! That’s one of the reasons I was the first to jump in his truck when he headed out.

A few select friends knew that, but for the most part, I never told anyone that. When we were out driving around in the spring time, he would always be checking the ditches. Not for garbage or recyclables, he was looking for ditch asparagus. Whenever we found some, he would have me stop and he would go picking.

We would take it home to Grandma and she would make all different kinds of things with it. One of my favorites was her cheesy asparagus and potato casserole, just like this one from The Weary Chef.

It was so yummy with the fresh vegetables. Now, me and my kids go asparagus picking, and I make this to take to them!
