This Is Just Like Eating At Mom’s House Again

I didn’t have a lot of friends in high school. It seemed like every time I started to get close to someone, we would have to move. My dad was in the military, so as much as once a year we were transferring to a different location. He was good at what he did, so I understand that they wanted him where they needed him the most, but as a kid, it was extremely frustrating. When we moved South, I finally was reassured that we were going to be staying for two whole years, long enough for me to graduate.

I really went on the hunt for some friends then. I met a gal named Anica, and we became fast friends. We were practically inseparable. Whenever we could, we were at the other person’s house. Her mother was an incredible cook, so if I was offered dinner, I was eating it.

She used to make a Mexican casserole a lot like this one from The Recipe Lion. It was by far my favorite dish of hers. She made it at least once a week and Anica knew how much I liked it so she always invited me on that day.

We did get to stay the two years and me and my best friend got to graduate together. I couldn’t thank my parents enough for that special treat.
