Who Unstuffed My Peppers and Made This Crazy-Good Casserole?!

I don’t know about you guys and gals but I’m a huge fan of stuffed peppers. I love the filling in the hollowed out peppers and the way the veggies cook up nice and tender. However, making stuffed peppers is kind of a pain, especially when your kids won’t eat the dang peppers! My children will gladly eat the filling but they won’t touch the peppers. So, I always feel like we are wasting massive amounts of food when I make stuffed peppers as the peppers themselves always get pitched. What’s a mother to do?

Make inside out stuffed pepper casserole, of course! This casserole is very easy to make and your kids will dig it because they aren’t being stared at by a giant, cooked green pepper on their plate. If I slice up the peppers small enough the kids will eat them. That’s a win-win situation if you ask me! So, have any of you ever tried making this casserole before?
