You can certainly make this casserole as fancy as you want by adding in a bunch of extra vegetables and other taco toppings. I have found that when I am making it for the kids though, it is better to just stick with this simpler recipe. In those instances, for the most part, less is going to go over better than more will. This dish is always pleasing to the peeps at my table.
Ingredients
2 lbs. ground beef
1 small chopped onion
3 C. shredded Kraft cheddar cheese
1 1/2 C. water
1 pkg. Old El Paso taco seasoning mix
Daisy sour cream
tortilla chips
chopped tomatoes
shredded lettuce
Instructions
Preheat oven to 350°
Cook beef & onion,drain.
Stir in water and taco seasoning and cook on low 3 minutes.
Put a layer of tortilla chips on bottom of greased 9″x13″ pan.
Spoon 1/2 of beef mixture over chips.
Sprinkle 1 cup of cheese over beef mixture.
Put another layer of chips. Then the rest of the beef mixture.
Bake 20 minutes and remove from oven and add rest of cheese and return to oven for about 5 minutes or until cheese is all melted and bubbly.
Top on plate with sour cream , and lettuce
