For quite a while in my high school and college years, I always wanted to be a juvenile probation officer, or at least someone that worked with at-risk youth. I grew up in a community where I watched a lot of friends and acquaintances take the wrong path. Many of them ended up in jail, others passed away too soon. I wanted to be a force that could help those that were struggling make the right decisions so that they didn’t end up like so many others that I knew.
After graduation, I worked for a time in a halfway home. It was a place for teens to go after getting released from jail when they couldn’t go back home. I loved to work with some of them in the kitchen.
Cooking was an outlet for more than what you would think. Taco casserole, like this one from Group Recipes, was one of our favorite dishes. It was so easy, so tasty, and really fun to make.
Now that I have achieved my dream, I get to make this for my own kids at home, while guiding them hopefully on the right path to success.
