One of my best friends in life I wasn’t lucky enough to meet until I was already twenty years old. We don’t have that story of knowing one another since kindergarten, because we didn’t meet until college. I am sad that I missed those early parts of her life with her, but I couldn’t be happier that we met when we finally did. As soon as we ran into each other in one of our classes, we were practically inseparable.
On one Spring break from school, my family was going back to Montana to visit my grandparents. I had just been there for Christmas, and my friend had invited me home with her, so I decided to do that instead.
Best decision ever. We had such a blast with all of her hometown friends. One thing that was even more amazing was her mother’s cooking. She was part Italian so you can only imagine the dishes she came up with.
My favorite was her three-cheese manicotti. It was just like this one from Group Recipes. I felt like a pig taking two helpings but it was just so good, I couldn’t help myself!
