A very dear friend of mine wanted to study abroad when we were in college. She ended up travelling to Spain for a whole year, all by herself, without knowing anything about the culture, and only speaking a few words of the language. To me it seemed really scary – I was intrigued by the idea but the thought of moving to another country alone was just too much for me.
For her, though, it was a dream come true. She loved Spain so much that she decided to stay for another two years and actually finish her studies there! Eventually she returned but she says a part of her heart stayed behind.
Maybe I’m selfish but I am glad she didn’t stay there forever! Not just because I would have really missed her, but also because she brought back her mad Mediterranean cooking skills. Can I just say, wow! Spanish food is absolutely delicious, and very healthy, too! This stir fry is proof of that.
