Church on Sundays was always a huge deal growing up. It wasn’t just me and my parents that went. It was the whole extended family too. We would all dress up, sit together through the service, and then head over to Grandma and Grandpa’s house for lunch afterwards. They always came up with the best dishes that could really feed a big crowd. They also lived on a budget, so I wasn’t really quite sure how they could always afford to feed all of us.
Then, when I came across this recipe on Group Recipes, a flood of memories came back to me. We had this so much when I was little. Grandma would usually make at least two pans, along with other foods for our meal. This was my favorite. I would just fill my plate with tater tot casserole and pass over everything else that was setting out.
When we stopped going to Grandma’s, I stopped getting this casserole on Sundays. I kind of forgot about it for a while, but now that I have the recipe again, I can make it for my family.
The first time, it was after church on Sunday, and everyone loved it. I’m so glad it’s back in my life.
