My twin boys love carbonara. Cream is the name of the game when it comes to pasta and they love nothing but creamy sauce and savory bits on their pasta. However, they know every pasta with white sauce as “carbonara”. It’s endearing and at the same time a bit funny at times. Sometimes, my Alfredo can pass as carbonara and they will just eat it without any question. You know how some kids call pasta spaghetti all the time? That’s what happens to my twins.
Anyway, just recently, I came across this carbonara version that reminds me of a recipe of my friend. It’s called green carbonara. If you’re thinking pesto pasta, well, it’s yes and no- quite but not quite.
This classic pasta version includes greens that you can also use for pesto, but this is still a bit different than most. It involves kale or spinach (depends on what you want), which are both acquired tastes. However, I assure you that they taste really good in this pasta version.
When I served this to my family, I thought the twins wouldn’t like it. They were looking at their servings as if they would be eaten in a few seconds. But after that, they simply shrugged and ate the pasta.
They all fell in love with it and I could really see how much they enjoyed the recipe. However, the question still arose after the meal- “Momma, why is carbonara green?”
