A Dazzling Cake That Will Brighten Up Your Day With Colors

I have a lot of nieces and nephews that are March Babies. In our family, that usually means “You need to bake a cake for each and everyone”. I get it, I get it, Family. It’s true though; since we are lovers of food, we appreciate our gifts more if they’re food. Most of the time, the gifts are in a form of cakes. Oh the joys on the faces of everyone when they receive a cake from each family. There is never really a contest between which cake tastes the best, because everyone just loves cake to ignore even a piece of it.

Emma’s daughter (she’s a cousin of mine) just had her birthday a few days ago. It was held at a small function room in hotel courtesy of Thomas, her husband. Prior to the celebration, I received calls from a few of my cousins asking what type of cake I would make- of course we didn’t want duplicates!

I decided to make a chocolate rainbow cake since my niece loves anything chocolaty. And I also know she would appreciate anything colorful. My husband agreed with my choice and even helped me frost the cake (he’s so good at that).

When we arrived at the party, the table was full of cakes from the family and I couldn’t help but smile. But don’t tell anyone- my rainbow cake was my niece’s favorite according to Emma. And I’m sure it can be your kids’ or grand kids’ favorite too.
