So Easy To Make, I Still Can’t Believe It!
I have to admit that my family’s favorite forever is roast chicken. It doesn’t matter what occasion it’s going to be- they are simply obsessed and I can’t do anything about it. I think I have mentioned about my husband’s chicken withdrawal, but he’s now back to normal and is always craving for chicken again. Sometimes that happens though, isn’t it? No matter how much you love a particular dish, there will always come a time that you will have to pause for a while. But then your appetite will come back with a vengeance because hey, it’s still your favorite food.
Anyway, when my husband’s love for chicken was rekindled, I decided to celebrate it by making a roast for the weekend. He was so excited because he can’t wait to be reunited with one of his loves. Our kids were even laughing at him simply because he looked so childlike doing a happy dance.
It was a simple weekend roast. I just added roasted vegetables and homemade mashed potatoes and gravy. It was a fulfilling meal and I could see that my husband truly missed eating chicken.
