Share The Fruits Of Your Labor With This Fluffy Pastry Cake

A few Spring fruits are in season now, however, I am not the type to rely on whichever is available during a particular season. When my family craves, I have no choice but to search for something in the grocery. It doesn’t matter if the available ones are not as good as when they are in season as long as I can make something for my family. Since my family loves fruits, that’s what they always crave for; and I have no heart to say no.

Just recently, my husband asked if I can make him a fruit cake. I knew he wasn’t talking about the Christmas fruitcake, but rather a cake with fruits on it. Fortunately, I have one recipe on hand that will allow me to cater to his request.

I found this fruit pastry cake recipe from a blog called Baking Quinn. This pastry is a bit tricky to make, but it will be so worth it in the end. The freshness in this cake will overwhelm you in a good way- and you will just be happy about this.

When my husband finally had his first taste, he wouldn’t let go of the pan. It’s been so long since I made something as fruity and sweet so I couldn’t blame him. I served this with vanilla ice cream on top and my kids loved it.

Quick Tip: Pour the batter into the pan and even out the top lightly. Then, spin the baking tin and you’ll notice the batter spreading out towards the edges due to centripetal force. The cake batter will concave towards the centre of the cake.
