A recipe doesn’t need to be complicated for it to taste great. My Mom always said that the simpler the meal you prepare, the more delicious it would taste. Because you don’t fight with time and exhaustion. You can concentrate more on these simple food, giving them all of your attention. You will have more room to perfect them therefore they will taste more savory. I have always followed that advice except for desserts.
One of my favorite things to cook simply is pork. For me, pork is already flavorful and savory; you don’t need to use a lot of seasonings to make it taste better. Whenever I cook pork, I adjust the seasonings for the pork and not the other way around.
During one of our dinners, I made this simple roasted rosemary pork loin with potatoes. It’s a pretty ordinary recipe, isn’t it? But when it was finished roasting, it tasted more special than most pork loin recipes.
The best thing about it is that I never even have to watch it all the time. I still have a bit of a few minutes left for me to whip up a rich dessert that could accompany it. It’s really ideal for a simple family dinner.

Quick Tip: The slow cooking takes advantage of the loin’s single-sided layer of fat. The potatoes cook in that fat, making it absorb the flavors.
