Just this Friday, my family and I were invited to a small birthday dinner at my brother’s house. It’s my nephew’s birthday, their eldest; and there were only us in there plus my brother’s best friend’s family. A few days prior to that occasion, I was a bit worried. I didn’t know what to bring. My husband and I already decided that I should just bake a cake because my nephew loves cakes. I agree since it’s the most practical solution; plus it will feel nice to share food with other people.
At first, I thought of baking a chocolate cake. My nephew is a fan of anything chocolaty, a trait he got from his dad. I knew that if I made chocolate cake, he would really love it.
But then my husband said I should think of something more special. He said I could always bake a chocolate cake even if it’s not my nephews’s birthday. It was he who suggested making rainbow cake.
I have my Mom’s rainbow cake recipe with me. She used to make rainbow cakes for my brother’s birthday. However, Mom’s version requires a few ingredients that I didn’t have (it was the day before), and I had to find a new one.

Quick Tip: You have to add a fair amount of colors (a fair amount being maybe 1/8th of a teaspoon, or possibly even a bit more for some colors) to get rich, bright colors.
