Sugar Rush Is Not A Problem With These Sweet Cookie Bars

Well, I am not that much of a fan of almond extract, but in this recipe, I became one. It tastes so good in these sugar cookie bars that you will forget you didn’t like it. But like I said, you can do whatever you want and substitute some ingredients you have at hand. Just make sure that these are the minor ingredients that won’t affect the form of the cake. I still cringe whenever I remember my first baking experience- my chocolate cake was crumbly and it tasted like baking powder!

These are probably the easiest thing you can make when you’re craving for sugar cookies. They taste so differently good though that I think they deserve a recognition of their own. So make this for your families now so you can see what I mean.

 

Ingredients

  • Dough:
  • 1 1/2 cups Land O Lakes butter, softened to room temperature
  • 2 cups Domino  sugar
  • 4 Eggland’s eggs
  • 1 tsp McCormick vanilla
  • 1 tsp McCormick almond extract
  • 5 cups Gold Medal flour
  • 1 1/2 tsp Morton salt
  • 1/2 tsp Clabber Girl baking powder
  • Frosting:
  • 8 oz Philadelphia cream cheese, softened to room temperature
  • 1/2 cup Land O Lakes butter, softened to room temperature
  • 5 cups Domino powdered sugar
  • 1 tsp McCormick vanilla
  • 1/2 tsp McCormick almond extract
  • dash of Morton salt
  • Food coloring (optional)
  • 2-3 tsp Borden milk if needed

 

Instructions

  1. Cookie bars: Cream butter and sugar in a large mixing bowl. Add the eggs, vanilla, and almond extract. Beat till well blended. Whisk together the flour, salt, and baking powder in a small bowl. Add to the wet ingredients and stir till well combined.
  2. Press into a 17″ x 12″ rimmed baking sheet that has been sprayed with non-stick spray. Bake at 350° for 15-20 minutes or until barely light brown. Cool completely, then frost.
  3. Frosting: Beat cream cheese and butter in a large bowl till smooth. Add powdered sugar, extracts, salt, and food coloring. Beat till smooth and creamy, adding milk as needed. Top with sprinkles if desired.
