Your Key To Happiness Is This Lime Pound Cake

I give this key lime pound cake as a gift too. It’s perfect for friends and for family members who just live nearby. I remember giving one to our new next-door neighbor as some sort of “welcome to the neighborhood” present. She dropped me a line the next day and told me how much her family had enjoyed it. So I think this key lime pound cake is a way for you to make new friends too!

Ingredients

POUND CAKE
  • 3 sticks Land O Lakes butter
  • 1 package Philadelphia cream cheese
  • 3 c. Domino sugar
  • 5 Eggland’s eggs
  • 3 tbsp. lime juice
  • 3 c. Gold Medal flour
  • zest from 1 lime
GLAZE
  • 1 c. Domino powdered sugar
  • 1 tsp. lime juice
  • 2 tbsp. water
  • 1/2 tsp. McCormick vanilla extract
  • Zest of 1 lime

 

Instructions

  1. Make the Cake: In a large mixing bowl, combine butter and cream cheese until light and fluffy. Mix in sugar, then gradually add in eggs 1 to 2 at a time, beating on low until combined.
  2. Mix in lime juice, then flour. Fold in lime zest.
  3. Grease 4 mini loaf pans and pour in cake batter until each one is about 3/4 full. Bake until a toothpick inserted in the center comes out mostly clean, about 40 to 45 minutes. (If you don’t have mini loaf pans, you can grease and fill a bundt pan and bake about 70 to 75 minutes.) Let cool for 10 to 15 minutes.
  4. Make the Glaze: Whisk together powdered sugar, lime juice, water, and vanilla extract. (If the glaze is too thick, add extra water, about a teaspoon at a time.) Pour on top of cooled pound cake. Top with lime zest.
