Are you fans of pineapple? My family isn’t. We are more of the berry-loving type of family. We are obsessed with anything berry-licious, which is why most of my homemade desserts have berries on them. My sons particularly love strawberries, while my husband and I love snacking on blueberries and raspberries. There are times when you will find me and my family having a berry feast.
I rarely make any food with pineapple on it. While I am a fan of pineapple juice, using it as a marinade for meat; pineapple is something that I avoid altogether. I have very few recipes with pineapples as the main ingredient, and I am not too confident in using it on meals.
This baked pineapple recipe from Seeded At The Table is an easy pineapple recipe that anyone can learn easily. It’s also a pretty versatile dish; you can add anything you want on it. It tastes pretty much sweet, but you can adjust the ingredients based on your family’s preferred taste.
My husband instantly fell in love with this dish. I served it to him for breakfast; something sweet for a change. He ate about three servings of it before he left for work.
My sons love this recipe too, most especially if there is a scoop of ice cream swimming at the top of this amazing main course slash dessert!
