My Hubby’s Famous Chicken Cornbread Cowboy Casserole, Y’all!

This chicken cornbread cowboy casserole always makes my mouth water. It’s not my recipe though. It’s my husband’s. While he was a kid, he used to eat this type of casserole and he enjoyed it. He sometimes makes this dish for the two of us while I prepare another simple meal for our twins.

 

We have a fairly large kitchen that was a pre-requisite for the house that we wanted for ourselves because we both love to cook. Him cooking beside me while our kids draw at the kitchen table is a common sight in our household.

 

It’s our form of family bonding that usually happens every time my husband goes home early from work or during weekends. It feels nice, isn’t it?

 

I love it when my husband cooks. He knows what I love in my food so he adjusts the seasonings based on both of our tastes; a sort of compromise so that we will both get to enjoy the food.

 

It’s one rule on our house, actually. Everyone should enjoy the food because meal time is family time; and everyone should feel like they belong regardless of age or gender. His chicken cornbread cowboy casserole is a simple recipe, but it’s close to my heart because eating it gives me that comfort.
