Become Your Kids’ Supermom With These Chunky Monkey Popcorn Bars!

Kids will definitely fall in love with these amazing, chewy chunky monkey popcorn bars. It’s full of everything that the kids want in their dessert. It doesn’t mean the adults won’t like it though. Because I and my husband are fans of these sweet treats. I am sure you will be too! They are super amazing!

I’m just a weee bit obsessed with popcorn bars because they are so easy to make, crazy delicious and can be flavored with just about anything. I was inspired by the flavors from Chunky Monkey ice cream: Banana, Chocolate and Walnuts.”

It is indeed a winner recipe! I even got a call from my cousin the night after. She is asking whether I can give her the recipe for these chunky monkey popcorn bars because her sons were craving for them! Thank you, Wonky Wonderful for this amazing sweet treat!

 

Ingredients

  1. 8 Cups Popped JOLLY POP Kettle Mania Pop Corn (or air popped corn)
  2. 10 ounces Kraft Mini Marshmallows
  3. 1 Tablespoon Kerrygold Butter
  4. 1 Cup Chopped Natuire’s Harvest Banana Chips
  5. 1 Cup Chopped Fisher Walnuts
  6. 1 Cup Hershey’s Chocolate Chunks

 

Instructions

  1. Prepare 9×13 pan. Line with foil and spray generously with nonstick.
  2. In large bowl combine marshmallows and butter. Microwave on high until marshmallows fluff up to double their size (between 1-2 minutes depending on microwave). Remove from microwave and stir to combine marshmallows and butter.
  3. Add popcorn and stir until mostly coated.
  4. Add banana chips and walnuts. Stir to combine.
  5. Gently fold the chocolate chunks in a little at a time to prevent it form melting too much.
  6. Transfer mixture to prepared pan and press down firmly with hands or bottom of a cup.
  7. Allow to cool. Remove from pan and carefully peel foil from bottom. Cut into 12 squares. Serve.

Quick Tip: You can use chocolate chips instead of chocolate chunks for this.
