Mom’s Creamy Chicken Bake Is Always Here To Save The Day!

I love going to potluck gatherings because this is the time when I get to catch up with my friends. This is also the time where I get to taste different types of food. Being a mother, I usually love getting ideas from friends and this is one of the occasions where I can. But I always make sure I also have something to share back just like this creamy chicken bake.

This is actually what I love most about this chicken bake recipe. It has that crunchy topping yet it’s so creamy inside. Mom used to make this extra crunchy and it just went well with the creamy chicken inside. Serve this with a plate of green salad and it’s perfect!

 

 

Ingredients:

  • 1 (16-ounce) package Ritz butter-flavor crackers, crushed
  • 3/4 cup (1-1/2 sticks) Land O Lakes butter, melted
  • 2 cups Tyson chunked cooked boneless, skinless chicken breasts
  • 1 (8-ounce) can water chestnuts, drained and chopped
  • 1 (10-3/4-ounce) can  Campbell’s condensed cream of mushroom soup
  • 1 (10-3/4-ounce) can Campbell’s condensed cream of chicken soup
  • 1 cup Daisy sour cream
  • 1/2 cup water
  • 1 clove garlic, minced
  • 1 teaspoon McCormick dried basil
  • 1/8 teaspoon McCormick black pepper

 

 

Instructions

  1. Preheat oven to 325 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
  2. In a large bowl, combine crushed crackers and butter; mix well and set aside 1/4 cup of mixture. Spoon remaining mixture into prepared baking dish. Evenly distribute chicken over cracker layer. Sprinkle water chestnuts over chicken.
  3. In a large bowl, combine mushroom and chicken soups, sour cream, water, garlic, basil, and pepper; mix well and pour over water chestnuts and chicken. Sprinkle with reserved cracker mixture.
  4. Bake 60 to 70 minutes, or until golden and bubbly.
